Tuesday, March 30th 6:00 p.m. – Join us for a rousing review of techniques and foods for the next tailgate! Cook along with Chef Matt.

Chef Matt will be presenting a demonstration of his Grilled Jambalaya Pasta. This flavorful pasta is perfect for a tailgate, and in the class, we’ll be learning so much more than just how to make this one dish.

On the grill, we grill Chicken, Shrimp, and Andouille, going over techniques and tips and tricks: He’ll also show us how to grill onions, peppers, celery, corn on the cob, and more, so that we have a nice collection of grilled meats and vegetables for our dish!

• when to use the lid,

• how to grill meat as compared to vegetables,

• how to get quality grill marks, and more.

Prepared casserole recipe“Jambalaya Pasta”. Combine the grilling part of the class with the final dish, so it all comes together in one coherent concept. Chef Matt will show us how to make the pasta sauce, cook the pasta, and even teach tricks like why you should save a little pasta water, and how to toast spices for maximum flavor.

The Grilled Jambalaya Pasta is then assembled, and Chef Matt will go over more tailgating tips, like how to hold the food both cold before the tailgate, and hot in chaffers (Sterno trays) during the tailgate, to make sure all the food is delicious, and safe for everyone to enjoy!

The weather looks perfect for grilling: sunny and in the 60s.Here are some suggestions to make for a perfect grilling session.

  • Prep meat and vegetables prior to logging onto the zoom

  • Heat the water on the stove before going out to grill.

  • and, most importantly, consider logging on with your phone for better mobility between grill and kitchen
